Hotpot is dinner you cook together. The pot bubbles in the middle of the table, the platters arrive, and everyone dips, swirls and eats at their own pace. Here is how a night at The New Hotpot goes.

The pot comes to you

Every table gets its own pot of beef bone soup, set on the burner and brought up to a rolling simmer. Clear, light and savoury, it is the base everything else cooks in.

Dip the beef, count to ten

The beef is sliced fine enough to cook in seconds. Drop it into the scoop, swirl it through the broth, lift it out while it is still blushing pink.

Dress it at the sauce station

Mix your own dip from the sauce station. Shacha, soybean sauce, chilli and fresh spring onion, as much or as little as you like.
